Think Tank Momma


It's time for me to get out of the "funk" that I've been in! (We'll talk more about that in another post later today or tomorrow!

I haven't been participating in a lot of the meme's that I used to participate in. This one I've never participated in but I should have been all along. Why? Well because it's sponsored by the fabulous Miss B at Think Tank Momma. She's cool shit people, go check her out! Why should I have been participating all along? Cause she's one of my BB Bishes!

Who are they? Only the coolest group of bishes you wish you could know! Lmao! Seriously, they totally rock. They're uber (yeah, I said UBER) forgiving with me. You see, I don't participate in my BB group as much as I should either! But it doesn't matter to them! Not matter how long it's been since I've joined in on the chat, they're always so welcoming of me.

Anygetyourcookin'on, here's my recipe. I haven't tried this one yet. A good friend of mine sent it to me a couple of weeks ago, she said it's really good though!






Cajun Sausage and Rice Casserole

Ingredients
½ lb. Ground beef
½ lb. Ground pork
½ lb. Cajun smoked sausage (sliced)
1small Yellow onion (chopped)
3cloves Garlic (chopped)
1-10ozcan Campbell’s French onion soup
1-10ozcan Campbell’s cream of mushroom soup
1C Medium grain white rice (raw)
All purpose seasoning to taste


Method

Preheat oven to 350°

Spray an oven safe three quart casserole with non stick cooking spray.

Combine all ingredients in the casserole and stir well to combine.

Note: The mixture will be quite watery.


Bake covered for one hour, or until the rice is opaque in appearance and tender to eat.

Remove from the oven and let rest for at least 10 minutes, then serve hot.

Yield is two quarts cooked. Feel free to double or triple the recipe as needed.

Dear HC: I forgot to ask...where do I get Cajun Sausage in Canada (we've got some Cajuns in the tree...it you know what I mean...from N.S. formerly Acadia! Yep!
