It's been a while since I've participated in Momma B's Share a Spoon. Since her theme is seafood this week she told me I had to I decided to share a couple of my recipes! (Totally kidding about the her being bossy part lol.) If you'd like to share a recipe you can click on the pic above. 
 
You might be surprised to know that even though I'm Cajun I don't eat much seafood, like almost none lol. I just don't like it. But this first recipe, I swear I think I could eat my weight in the stuff. It's good y'all.
 



{Good Lawd this stuff is GOOD!}

Hot Crabmeat Dip

1/2 stick butter
2 stalks celery, diced
2 cloves garlic, diced
8 oz cream cheese, cubed
8 oz processed cheese (Velveeta), cubed
1 tbsp milk
1 tsp cayenne pepper
1 bunch green onions, chopped
1 lb lump or jumbo lump crabmeat, picked over for shells
Shredded cheddar to sprinkle on top

In a medium saucepan, melt butter and add celery and garlic. Cook over medium heat for about 15 minutes. Add cream cheese and processed cheese - lower heat, and stir constantly until melted. Add milk and mix well. Add peppers and green onions, blending well. Fold in crabmeat. Pour into oven safe ramekin, sprinkle cheddar on top and bake at 350 until cheese on top is melted and bubbling. Serve warm with crackers or toast rounds.

The next recipe I found on Food Network (here) a couple of years ago and I knew hubby would love it. I've cooked it a couple of times and he loves it. I wont eat it, I'm not big on shrimp (unless it's fried), but everyone who's tried it really liked it!



Smokin' Dave's Cafe's Fiery Cajun Shrimp Alfredo


1 1/2 pounds large shrimp, peeled and deveined
6 tablespoons Essence, plus more for garnish, recipe follows
2 tablespoon extra-virgin olive oil
10 ounces andouille sausage, chopped
1/2 medium onion, minced
1 1/2 teaspoons crushed red pepper flakes
5 cloves garlic, minced
3 shakes Worcestershire sauce
1 pound linguine
2 cups heavy cream
1 cup whole milk
1 tablespoon freshly ground black pepper
1/2 teaspoon hot chili powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, sliced
1 1/2 cups grated Parmigiano-Reggiano
Chopped fresh flat-leaf parsley, for garnish

Place the shrimp and 3 tablespoons Essence in a large resealable plastic bag and shake. Place the bag in the refrigerator while you prepare the sauce.

Heat a deep 3-quart skillet over medium-high heat. Add 1 tablespoon olive oil and the andouille sausage. Saute sausage for 2 minutes, stirring often. Add onions and saute for 2 minutes. Add crushed red pepper flakes and garlic and cook 1 minute. Add Worcestershire sauce.

Meanwhile, cook the pasta in boiling salted water according to package instructions.

To the skillet, add cream, milk, remaining Essence, black pepper, chili powder, and salt. Stir to a consistent color. Add butter and stir until melted. Stir in cheese until melted. Lower heat to a simmer.

Heat the remaining olive oil in another large skillet over high heat and add the shrimp. Saute shrimp for 1 to 2 minutes per side or until they just start to turn pink. Add the shrimp and cooked, drained pasta to the first skillet. Stir to combine and blend flavors, about 1 minute.

Serve in a large pasta bowl. Sprinkle with parsley and Essence for garnish.

What I've been up to....

Man, I've been blogging less and less lately. No particular reason, just haven't had a whole lot to talk about. But I've got some random thoughts to post today!

* Last week I got up and cleaned my house spotless, from top to bottom. I clean all the time, but this was more like a major spring clean. I love that when I'm finished I can just sit down and see everything nice and shiny, and that the house smells nice and clean instead of smelling like a couple of pugs. Yuck.

* The weather has been so gorgeous here. The day that I cleaned the house like a mad woman hubby came home and opened all the windows. (Can you see where I'm going with this?) He couldn't believe that I hadn't opened them up yet. Within 10 minutes every.single.object.in.my.house was covered with a funky green colored "dust". Hello pollen. Eff' you!

* I decided that I needed some new undies. Because I'm too cheap to spend some VS kind of money on them  I just bought some Hanes undies (from Wal Mart of course). Please tell me who in the eff decided that a size 8 (which are actually to damn big on me any way. damn it) is an xtra large? In what world? Eff you too Hanes!

* I'm buying my tickets to go see my Sister, my Aunt, and my cousins in TN for the 4th of July. It's my Mother's Day present from my son. What a kid huh? It's gonna be a crazy two weeks! Bad Girls Club style! That's how we "roll!" Haha! Actually we'll be spending a lot of time at my Aunt's cabin at the Lake! I'm really looking forward to it!

* Hubs has been doing a lot of work on my car. She's been parked in the garage (in pieces) for a couple of weeks. Try going from driving a small Lincoln to driving a Ford F-150. It's like driving a damn tank y'all! Lookout if you see me on the road...just sayin'!

* I've been talking to my Son a lot lately. Y'all know I love that! I've noticed some changes in him. He started posting things like this on FB...

  

And then I saw this comment that was left on his profile...

He's a very "private" person though, and he fusses at me whenever I ask any questions, so I kept quiet. Then last week I got a text message from him that included this pic...

I told him to tell her that as long as my kid is happy, she has no reason to be nervous! Now, if she hurts him... she might want to hide. Haha!

Since I'm "not allowed" to add any of Rusty's "friends" I was surprised when I got a friend request from her the next day! She's so adorable.

Her and I started talking (via messages) and I thanked her for adding me and told her how I wasn't "allowed" to add her. This was her reply...

{yeah, she "scored" a couple of points for that comment lol}

 So I did what any nosy Mom would do. I went to look at her pics lol. And I saw this...

How sweet are they? Honestly, I surprised that he even talked to me about her. Like I said, he's really private! I asked him if she's his gf and he said "I'm trying to make her my gf!" Awww! 

He talked to me about her last night and he said that she doesn't mind how much he works (sometimes over 100 hours a week), he said it's hard to find someone who can deal with his hours. So that's a good thing! She actually met Rusty's grandparents day before yesterday! Rusty said she's scared to death to meet me.

I'm not mean. Really y'all. Lol ok...I can be, when necessary! 

While I was taking all the screen shots for the above I decided to take some of Rusty's status updates. The kid is hilarious y'all! He makes me laugh, so I thought I'd share my fav's with y'all! You'll have to excuse the language on some of them. He IS my son y'all lol! In no particular order...




























 I love that kid, he always knows how to make his Momma laugh! Hope y'all have a good rest of your week!

Project: Love, Me Prompt 2

I got bored with my old layout. I was bored with the design, I was bored with the colors. This new design is right up my alley right now! It's definitely bright lol! What do y'all think? (If I could only figure out why it's adding a background and border behind/around my pics! Grrr....

Since I have nothing exciting to write about I'm going to continue on with my Project: Love, Me. If you'd like more info or would like to join in on the fun you can do so here.

Prompt #2: Dreams - Flashback

Let’s flashback to the past!

What were your dreams when you were younger? What did you used to dream about — whether it came true or not? What was important to you when you were growing up? Where did you think your life would take you?

Focus on one specific dream, or share several. Pick a specific time period — childhood, teenager, young adult, etc. — or share a dream from each.


When I was very young I dreamed that my parents would get back together. I think that somewhere deep inside of me I was still holding out hope for this to happen until the day my Mom passed away.

I used to dream of living on the beach with my husband and our 2 kids (boy and girl) and our German Sheppard. Lol...

I dreamed of being an Attorney. I dreamed of making a difference in peoples lives. Then I realized that I'd have to defend people who were guilty of horrible crimes. Or I'd have to prosecute people who sometimes were innocent. (It does happen) I just couldn't stand the thought of the pressure of that lol. So then I decided that I'd be a Real Estate Attorney.

My Mom used to tell me all the time that I'd make a great one....she said I could argue my way out of anything. Lol... And I liked to talk, hell they called me "Motor Mouth" because I talked so much.

Sometime while "growing up" I lost those dreams and gave up on them. I'm guessing it was probably around the time that I was being molested and nothing was done to him.

Years later when I found out that I was pregnant I only had one dream. To be the best Mother I could be. To be a better Mother than my Mom was. Not that she was a horrible Mother, she wasn't. You just always want better for your kids than what you had!

At least I can say that I accomplished one of my dreams! I think I've done a great job and that I've raised the best kid I possibly could have. It shocks me (sometimes) how well he turned out!

Remember the hubby that I lived on the beach with? I guess I should introduce y'all to him. Bloggers, meet my (pretend preteen) "hubby" Leif...

And just in case things didn't work out with him, you know like if he turned into a drug addict or something, I had a back up plan. Bloggers, meet my second (pretend preteen) "husband" Scott.

 {Lol I just realized when I was looking for this pic, my kid kinda looks like him! Must be what attracted me to his Dad *cough* in the first place haha!}

I tried to find a pic of Scott from his time on Happy Days but every single pic that I found from then had that bitch Joanie in them with him. *rolls eyes* HATED HER!
